Inside Balbosté’s Paris Culinary Experience: Le Premier Dîner

THE WED steps into an evening of culinary craft and artistic ritual to celebrate Balboste's new home at Le Grand Atelier in Paris

In an intimate, immersive setting, Balbosté opened its doors for an exceptional culinary experience, Le Premier Dîner. Founded in 2017 by Charlotte Sitbon, Balbosté has since evolved into a studio known for crafting singular and elevated experiences for clients, including Chanel, Louis Vuitton, and private commissions. To celebrate the opening of their new home, Le Grand Atelier in Paris’s 17th arrondissement, they created an experiential world where art and food collided.

Over seven nights, and with just twenty-two guests each evening, Balbosté invited us to step into a dimly lit, meticulously staged space where every detail awoke the five senses. Plates were created in collaboration with seven artists from around the world, with each dish functioning as both a culinary composition and a sculptural work. Textures, flavors, and ingredients materialized in physical form: hammered metalwork captured the dish’s structure and textures, a fluid water insatallation mirrored an entrée that was fresh, light, and filled with movement, and carved wood grounded the evening with depth and earthy warmth.

More than a dinner, Le Premier Dîner was a living dialogue between creativity and culinary art. It was a week where Balbosté proved its ability to turn art into something not only seen, but something you could taste, feel, and even carry with you.
